Ingredients You’ll Need to Make this Roasted Red Potatoes Recipe
POTATOES: For this recipe, you will need a few pounds of red potatoes. Using baby red potatoes will reduce the time it takes to cut them cut. Large red potatoes will need to be quartered or cut into 1-inch pieces… hence more cutting. You can also substitute baby Yukon golds or other baby potatoes. The cook time will be the same.
STARCH: To get a good coating on the potatoes you will need some type of starch. This can be cornstarch, potato starch, or tapioca starch. If you pick tapioca starch, just make sure it is starch and not tapioca flour, which is more coarse.
PARMESAN: Freshly grated parmesan cheese works best for this recipe, not only because of its taste but also in the way that it melts. You can also use pre-shredded parmesan, but freshly grated melts better.
PRODUCE: You will need a few cloves of garlic and if you would like to garnish the dish when it is done then pick up some Italian parsley too.
SEASONINGS: You will need salt, pepper, dried oregano, and garlic powder.
OIL: To coat the potatoes you will need olive oil or avocado oil.

STEP 1 Preheat the oven to 400 degrees F. In a large pot or stock pot, bring water to a boil and then add the potatoes. Boil until fork tender, about 6-9 minutes.
STEP 2 While the potatoes are boiling, mix the oil, parmesan, salt, pepper, garlic, oregano, and garlic powder in a small bowl and set aside.
STEP 3 Once the potatoes are done, slice them in half and then add them to a resealable bag or large bowl. Add the starch to the bag, seal, and shake to coat the potatoes.

Parmesan Roasted Red Potatoes
- Preheat your oven to 400 degrees F and line a baking sheet with either parchment paper or a silicone baking mat. Set aside.
